Rachael Café's Beaucoup Shrimp
Tried and true, it might seem difficult to shake up a Southern tradition like fried shrimp, but Rachael’s Café’s Beaucoup Shrimp is a welcome variation. The Dish of the Week includes fresh Gulf Coast shrimp, deveined, fried and drizzled with a spicy mayonnaise-based sauce. Served on a bed of crisp lettuce, the dish can serve as either an entrée or appetizer for $9.
Rachael’s Cafe is a family-owned and -operated Cajun restaurant, where owner Rachael Hebert works alongside her two daughters, Kellie and Tiffany, and her sisters, Phyllis and Stephanie. Jolie's Louisiana Bistro's Grilled Watermelon
What says summer more than a slice of watermelon?
Jolie’s Louisiana Bistro combines the two food practices that summer requires: eating juicy watermelon and grilling. Juicy and only slightly grilled, the two slices of watermelon from Robin Farms in Church Point are stacked on a wild arugula salad with champagne vinaigrette. The Lab's Hand-Poured Coffee
Monday's Dish of the Day is a drink, quite possibly the best cup of coffee to ever touch your lips.
Visit The Lab Handcrafted Coffee and Comforts in River Ranch, Lafayette’s newest café, for a cup of coffee unlike any other. “Everything we do is based on science, chemistry and experimentation,” owner Thomas Peters says as he describes The Lab's signature hand-poured coffee — today’s Dish Drink of the Day. The detailed process involves exact measurements and temperatures and a two-and-a-half minute pour time that leaves a coffee devoid of the traditional bitter taste. Oh, and he recommends you try it black.
“It extracts the most beautiful flavors, and the filter removes all of the bitterness from the grounds,” Peters says. “I want people to realize coffee doesn’t need to be weighed down by sugar or cream.”
The Lab opened its doors at 1042 Camellia Blvd. on June 28 to serve Lafayette a variety of coffees, teas, pastries, artisan chocolates and its signature cold sweet creams — a hybrid between gelato and ice cream. Visit Monday through Friday from 7 a.m. to 9 p.m. and Saturday from 9 a.m. to 9 p.m.

Pont Breaux's Zydeco Salad

The French Press' Grits and Grillades
For breakfast or lunch, The French Press serves its version of grits and grillades for those with hearty appetites.
The French Press, best known for its incredible breakfast menu, is home to Cajun favorites with gourmet twists, including the grits and grillades for $8.50.
The grits are stone ground, and the grillades are Uncle Sammy’s recipe with stewed tomatoes and topped with two fried eggs. For a seafood supplement, add the fried oysters for $3.

Coyote Blues' Churrascaria
Coyote Blues Fresh Mexican Grill prides itself on this edible artwork: churrascaria, composed of four different meats and a plethora of spices. Bailey's Creekstone Hamburger

La Fonda's Filet Mignon
While La Fonda is best known for its Mexican fare, Friday’s Dish of the Day highlights the restaurant’s steakhouse origins. Made with fresh, never frozen steaks, the filet mignon is charbroiled to temperature and served with a tossed green salad, choice of potato (baked, fried or potatoes de La Fonda) or enchilada and flour tortillas. Whole Wheatery Eatery, located in the Oil Center at 326 Travis St., serves up two offerings for plate lunches every day: a meat lunch and a vegetarian lunch. iMonelli's Soft Shell Crabs

Though soft shell crab season is shorter in other areas, the warm waters of the Gulf allow soft shell crab season to stretch from April to October, and iMonelli is serving crab on crab to celebrate. The soft shell crabs are not their own species, but are actually blue crabs that have molted their shells, so they retain all of their flavor and meat but without the hard shell. iMonelli’s pair of soft shell crabs are fresh, lightly dusted in flour and fried until crisp. INGREDIENTS:
3 cups all-purpose flour
1 T baking powder
1/2 t salt
16 T unsalted butter
2 cups sugar
zest of 2-3 key limes
4 large eggs
1 1/2 cups buttermilk
2 t vanilla
DIRECTIONS:
1. Set oven to 350º.
2. Combine flour, baking powder and salt in medium bowl, whisk together and set aside.
3. Add the butter to an electric mixer and beat on medium high until light and creamy.
4. Beat in lime zest.
5. Add sugar 1/4 cup at a time.
6. Add eggs 1 at a time until incorporated.
7. With the mixer on low speed, add the dry ingredients alternately with the wet ingredients, beginning and ending with the dry ingredients and mixing until just incorporated. Scrape down sides of bowl as needed.
8. Fill each liner about 2/3 of the way full.
9. Bake 18-22 minutes.
10. Allow to cool in pans 5-10 minutes, then transfer to a cooling rack to cool completely.

Prejean's Acadian Bread Pudding
As one of Lafayette’s first Cajun-themed restaurants, Prejean’s is known throughout Acadiana for its authentic cuisine and nightly Cajun music. This week’s Dish of the Week is Prejean’s Acadian Bread Pudding, a traditional Louisiana dessert made with French bread, eggs, milk and spices. Go ahead and give its famous recipe a try, or enjoy this flavorful dessert free with the purchase of any entrée until Aug. 15. Prejean’s Restaurant is located on 3480 NE Evangeline Thruway and is open Sunday through Thursday from 7 a.m. to 9 p.m. and Friday and Saturday 7 a.m. to 10 p.m.
INGREDIENTS:
3-4 French breads, torn or cut into small pieces
6 eggs, beaten
4 cups milk
2 cups evaporated milk
2 cups sugar
2 t brown sugar
2 t ground cinnamon
2 t vanilla extract
½ cup melted butter
½ cup cold butter
DIRECTIONS:
1. Preheat oven to 400 degrees
2. Place bread pieces in a large mixing bowl
3. In another bowl, combine eggs, milk, evaporated milk, sugar, cinnamon, nutmeg, and vanilla and blend well. Stir in melted butter.
4. Add egg mixture to bread in bowl and stir until mixed. Let stand until liquid is absorbed and bread is saturated. Pour into greased 9x13-inch pan. Sprinkle chopped butter on top.
5. Bake 30 minutes. Reduce heat to 350 degrees and bake 45 to 60 minutes or until center is firm. Remove from heat and serve warm.
Serves 20
Jack Daniel’s Sauce
1 cup sugar
1 cup water
½ cup butter
2-4 ounces Jack Daniel’s whiskey
In a saucepan over high heat, combine sugar and water to make a simple syrup. Add butter and stir until completely blended. Just prior to serving, add whiskey.
Recipe makes 2 ¾ cups of sauce.

Tsunami's Crunchy Roll
Until Aug. 15, enjoy a $20 meal of Miso soup, salad, one regular roll and entrée at Tsunami during the 2012 EatLafayette campaign.
Diced tempura shrimp, masago – a type of fish roe – and avocado wrapped in sticky rice and drizzled with a special sauce, Tsunami’s Crunchy roll ($7) is one of the restaurant’s most popular items. The Crunchy roll is part of a larger EatLafayette special, where diners can order Miso soup, a house salad, one sushi roll (less than $9) and a choice of Chicken Teriyaki or Tonkatsu entrée for $20. During the campaign, Tusnami will feature 17 of its famous rolls, including the Alaskan roll ($8), Philadelphia roll ($6) and John Breaux roll ($8) –a sautéed crawfish and avocado roll served with a spicy sauce.
Tsunami opened its doors in January 2000, offering many adventurous eaters of Lafayette their first taste of sushi. Today, Tsunami is known for its premier Asian cuisine and upscale atmosphere and located on 412 Jefferson Street. Sophi P. Cakes's Southern Belle
Sweet as its namesake, Sophi P’s Southern Belle cupcake was created in celebration of the 2012 EatLafayette campaign.
Using sweet potato mix from Bruce Foods, Sophi P’s crafts a sweet potato cake, topped with a spiced praline buttercream and spicy pecans. “We’re big on promoting the Southern culture,” Sophi P. co-owner Jennifer Melancon says.
Sophi P. Cakes is Lafayette’s original gourmet cupcakery, offering unique and flavorful cupcakes that suit any occasion. Poorboy's Riverside Inn's Oysters Rockefeller
This dish features a seafood favorite: oysters, something Poor Boy’s Riverside Inn is famous for. For its Oysters Rockefeller, the restaurant creates a mélange of savory and salty seasoning combined with spinach atop freshly shucked and steamed oysters. Then Poor Boy’s bakes the oysters with the Rockefeller sauce on top of rock salt in dozen or half-dozen portions. Poor Boy's Oysters Rockefeller and Oysters Bienville |
INGREDIENTS:
2-8 oz fresh/frozen spinach packages (boiled & chopped)
2 cups chopped green onions
1/4 lb bacon finely chopped
2 T Herbsaint absinthe liqueur
1 T minced garlic
2 oz Herbsaint
1 cup celery
1/4 lb butter (unsalted)
1-2 oz can anchovies (chopped fine)
1/4 cup of parsley (finely chopped)
salt, red, white & black pepper to taste
2 dozen oysters
2 T chopped red bell pepper (optional)
Directions:
1. In a medium saucepan over high heat cook bacon until brown and crispy.
2. When crispy, add Herbsaint and simmer for four minutes.
3. Turn down heat to low. Add all ingredients, stir well, cover, simmer until veggies are soft.
4. Shuck two dozen oysters, wash, then par boil them.
5. Rinse two dozen of the shells, put the oysters in, then cover completely with Rockefeller sauce.
6. Put rock salt in a large platter, place oysters and Rockefeller on top, then bake at 350 degrees for 10 minutes.

Don's Traditional Crawfish Bisque
Don’s traditional crawfish bisque begins with 20 pounds of crawfish, which are scalded, peeled and cooked into a roux with onions, celery, tomatoes and garlic and cooked down. The restaurant’s recipe makes a gallon of bisque at a time, cooked for two hours and topped with stuffed crawfish heads along side a small heap of rice.
